Recipe – Tofu Tikka Masala

Serves 4:

  • Firm Tofu – 150 g
  • Tikka Masala Paste – 35 g
  • Natural Cashew Yoghurt – 60 g
  • Rice Bran Oil – 10 ml
  • Brown Onion – 30 g
  • Garlic Clove – 1 qty
  • Fresh Ginger – 2 g
  • Tomatoes Chopped in Puree – 100 g
  • Green Capsicum – 60 g
  • Lemon Juice – 5 ml
  • Frozen Peas – 50 g
  • Brown Rice Medium Grain – 70 g
  • Fresh Coriander – 2 g
  • Cashew Nuts (Raw) – 5 g
  • Lime Juice – 5.2 ml

Preparation

  • Prepare the tofu by squeezing out any excess water. Tear the tofu into chunks and place it in a large bowl.
  • Mix together a small amount of the tikka masala paste with enough yoghurt to cover the tofu. Season with salt and pepper. Pour the marinade over the tofu, and use your hands to coat the tofu evenly. Cover and refrigerate for 30 minutes or overnight if you have time.

Cooking

  • Prepare the rice as per packet instructions.
  • Prepare a baking tray by lining it with baking paper. Spread the tofu evenly across the sheet. Bake in the oven for 20 minutes, turning halfway through.
  • Dice the onion and garlic, and grate the ginger. Chop the capsicum.
  • In a frying pan, add the oil and saute the onion. Add the garlic, ginger and remaining tikka masala paste into the pan. Cook until fragrant. Pour a little water into the pan. Stir well until the water has evaporated.
  • Add the capsicum to the pan and cook in the sauce. Pour in the tinned tomatoes and a little water, and season with salt and pepper.
  • Add the remaining yoghurt into the sauce once the sauce has reduced a little. Place the tofu into the curry, and stir through the peas.
  • Serve with cooked rice, and garnish with coriander, cashews and lime juice.
