Recipe – On the Go Taco Bowls

Serves 4:

Ingredients

  • Brown Rice Medium Grain: 100 g
  • Extra Virgin Olive Oil: 4 ml
  • Crushed Garlic: 6 g
  • Brown Onion: 160 g
  • Premium Beef Mince: 500 g
  • Mexican Taco Spice Mix: 35 g
  • Water: 125 ml
  • Black Beans: 220 g
  • Supersweet Frozen Corn Kernels: 100 g
  • Truss Tomatoes: 180 g
  • Tomato & Capsicum Salsa (Mild): 100 g
  • Fresh Coriander: 20 g
  • Edam Cheese: 80 g

Instructions

  • Cook rice as per packet instructions. 
  • Finely dice the onion.
  • Drain the black beans.
  • Cut the tomatoes into chunks.
  • In a pan, heat the olive oil. Add the onion and garlic, cooking until aromatic.
  • Add the mince and corn kernels and cook until mince is browned.
  • Pour in the taco seasoning and water. Mix well, then bring to a simmer to thicken for 5 minutes.
  • Assemble evenly into bowls or containers the cooked rice, beans, corn, fresh tomatoes, mince mixture, salsa, grated cheese and fresh coriander. Enjoy!
  • Optional: Serve with a lime wedge.
